So I said I was going to take a nap, but then my stomach started growling, so I made dinner instead!
“Spaghetti” and meat sauce!
First, I sweated some onions and garlic in a pan…
…then I added a pound of ground turkey meat to brown.
Now, I actually enjoy making my own tomato sauce from scratch, but I was lazy (and starving) today, so I just tossed in a jar of store bought tomato sauce (all natural ingredients, no added sugars!!)
Meanwhile, I chopped a spaghetti squash in half, pulled out all the seeds and stuff, and microwaved it, covered, in a glass baking dish with about a half inch of water, for 10 minutes or so.

Once the squash was done, I used a fork to scoop out the spaghetti like strands, topped with the sauce and some fresh parsely, and voila! Dinner is served!
Yum.
In other, non-foodie news, today begins the NaNoWriMo Camp. For those of you who don’t know (I didn’t), NaNoWriMo stands for National Novel Writing Month, which is held in November. Apparently you sign up and the goal is to write 50,000 words during the month of November in hopes that you will end up with a novel at the end. Well, I was too late for November, but I did find NaNoWriMo Camp – which sort of a mini-version, and it starts today! I’m all signed up with a goal of writing 20,000 words between now and 30 April. Wish me luck!
