Ohmygoodness. So, this stuff? Turned out to be way better than I ever dreamed.
This bag of broccoli slaw had been sitting in my fridge since, um…before I went to Boston last weekend, so it really needed to be used up.And I also happened to have some leftover homemade curried mayonnaise ALSO sitting in my fridge, so it only made sense that I would make…broccoli salad-slaw! (Really, what else would one make with a bag of broccoli slaw, I wonder? Maybe that should be my next food challenge…)
Now, it should be noted that I’ve never made coleslaw in my life. Or broccoli salad I wasn’t even sure what goes in either of them, except for mayo and sugar and sometimes raisins.
So…I improvised!
You’ll noticed I added some fresh broccoli to this, which I why I couldn’t decide whether to call it a slaw or a salad. But I pulled out the bag of broccoli slaw and, well, I wasn’t even sure if there was any broccoli in it. Can you call it broccoli slaw if it doesn’t have the florets? Not in my book.
I heart broccoli.
I started with the bag of slaw and some fresh chopped broccoli florets. Then I diced up a couple of stalks of celery, because I love it and it would add some more crunch. And then I added some raisins and chopped walnuts. I’m all about texture – I don’t understand those picky eaters who say “It’s a texture thing.” Really? Maybe I don’t get it because there are probably only about three foods in the world that I won’t eat – oysters and clams being two of them, because…um…ok, because I don’t like that they are slimy (oysters) and gritty (clams). Dang it.
Ok, so it’s a texture thing. Maybe I DO get it. (Apologies to all of you out there!)
After I added the dry ingredients, I combined them with my curried mayo, some lemon juice, and…are you ready for this? In an absolute stroke of genius I added a healthy dose of THIS:
So the picture sucks, sorry about that.
I love Frank. I don’t know who he is, but I love him. And I especially love his Red Hot hot sauce.
I don’t know what possessed me to add it, maybe to add a kick to go with the curried mayonnaise, but I stirred everything together and then I (somewhat cautiously) took a taste.
You guys. It was the best darn broccoli salad-slaw I’ve ever had in my LIFE.
I mean, this had everything going for it. There was the crunch of the broccoli and the celery, the chewiness of the raisins, the subtle nuttiness of the walnuts, the sweet, the spice. And it’s super healthy and simple. I would definitely bring this to a picnic or a BBQ. Come to think of it, I just invited to a Memorial Day BBQ…WIN! Make this for Memorial Day!
