What I Ate Wednesday

Well, hello there! Is it really Wednesday again? You know what that means, right??

Time for another episode of What I Ate Wednesday, compliments of Jenn at Peas and Crayons!

As usual, this is my day of Tuesday eats. Breakfast started off with an omelet made with two eggs, asparagus, baby bella mushrooms, and some grass fed cheddar cheese:

Lunch was leftovers of my orange ginger marinated chicken and asparagus (picture taken from dinner the night before)

which I ate with a salad and an apple on the side:

Finally, I finished up with a simple shrimp stir fry for dinner. I really didn’t feel like cooking, but I had a pretty decent workout at the gym so I knew I needed the nutrients. Plus, I had a ton of veggies in my fridge that needed to get used up.

After dinner I enjoyed a cup of loose leaf lavender tea (unpictured), to calm me down and prepare me for bed.

As you can see, I have no problem eating my fair share of vegetables! Since I started eating Paleo, I primarily eat veggies and protein – meat and fish and eggs. My snacks (when I eat them) consist of raw and unsalted nuts, hard boiled eggs, veggies, and the occasional piece of fruit. I’ve always loved vegetables, though, even as a little kid, so this way of eating suits me well!

  1. Everything looks incredible, especially your lunch! Lately I’ve been obsessed with salads containing, tuna, apples, raisins, cucumber/celery & laughing cow cheese. So good!
