You know what’s embarrassing? Tripping on the treadmill at 6.5 miles per hour and slamming into the display.
You want to know what’s worse? Doing it twice.
Yeah, that was definitely me yesterday. And much as I wanted to, that’s one of those things you just can’t pretend didn’t happen. It was all I could do to stay on that treadmill and finish my workout, but finish I did, and I felt great for it! You know…except for the bruises on my forearms. Oy vey.
So now that the most embarrassing story of the day is over, let’s talking about something else. Like food. Like all the food I ate yesterday! That’s right, it’s What I Ate Wednesday, hosted by Jenn!
The theme for this month is sensible snacking, but I’m pretty sure I’ve done that theme to death now with this and this. So today I’m just going to talk about What I Ate Tuesday instead. Dig?
I started the day right with some slow cooker pork carnitas topped with two fried eggs and some fresh salsa. The only downside was that I had garlic breath all day at work, but I love garlic and I don’t particularly love my job so I call that a wash.
For lunch, I kept it simple with a salad, some sauteed african smoke spiced shrimp, a flavorosa plumcot (part plum, part apricot) that was out of this world, and some snap peas and celery sticks. What can I say, I like my veggies!
I worked out in the afternoon, so I had a little snack of rosemary and sea salt marcona almonds and a sparkling water to hold me over until dinner. I heart marcona almonds.
And then, because I have an entire crock pot worth of pork carnitas (it was approximately 3 pounds, no joke), I made these carnitas lettuce wraps with salsa and avocado with a side of truffled sweet potato fries for dinner. To die for. Good thing I love carnitas, because I’ll be eating it for the rest of the week…and then some.
And because I felt like it, I finished the evening off with a cup of lemon ginger tea and some Trader Joe’s dark chocolate. I’ve been suffering from a bit of a sweet tooth lately, and just a square or two of chocolate is enough to satisfy my after dinner craving. I try to use it as an indulgence more than an everyday occasion…to be honest I forgot I even had chocolate in my pantry, so it was a nice surprise!

I’ve never made pork carnitas and actually, we don’t pork but it sounds really good! I’ve been wanting to give pork a try again after about 10 years of no beef and pork so maybe I’ll start with carnitas! Sure looks good!
Impresses me that you had the treadmill at above 6 miles/hr!!!! I trip at 3.5, broke a rib on the side bar once and I thought I was the world’s champion clutz, still hold that title. Love your blog!!!
