What I Ate Wednesday – Episode 10

Oh, sleep. How I do miss you.

For some reason I have not been sleeping lately – neither well nor at all. I’m tired, all the time, but by the time bedtime rolls around I just can’t shut my mind off. No matter how tired I am. Very. Frustrating. So as I lay there in bed with my eyes tightly pressed shut (I refuse to stare at the ceiling or get up and do something when I can’t fall asleep because I feel that’s admitting defeat. If I lay there with my eyes closed I’m that much closer to falling asleep. In my mind, anyway. It doesn’t always work.) inevitably I start to sing the words from the scene in “Sleepless in Seattle”, where Meg Ryan can’t sleep and so she goes downstairs to the kitchen and listens to the radio and then hears the repeat of Tom Hanks’ call to the radio show?

When the sun is high in the afternoon sky/ you can always find something to do / But from dusk ‘til dawn as the clock ticks on / something happens to you. / In the wee small hours of the morning…

Anybody with me? Or am I the only one who does that? Yeah, I’m probably standing alone on this one.

This is what happens when I don’t get enough sleep.

But instead of talking about sleep (one of my favorite subjects, when I’m actually getting some), let’s talk about food! (My MOST FAVORITE subject! And it’s Wednesday, so you know what that means!

BREAKFAST

breakfast 1

I have to tell you I was not in the mood for breakfast this morning. I didn’t sleep well (surprise, surprise), so I was still tired, kind of groggy and more than a little cranky. Plus I wasn’t hungry at all. But I know what would happen if I didn’t eat breakfast – somewhere around 0900 I’d start to get a caffeine headache from coffee on an empty stomach, and said empty stomach would start growling like an alley cat and so I’d scramble through my desk drawers for a Larabar, which makes a great snack but is too much sugar and not enough other stuff to keep me full for very long. And then not only would I still be hungry, my caffeine headache would turn into a caffeine and sugar headache and then I’d REALLY be pleasant.

So I ate breakfast. Leftover steak and roasted veggies from dinner and a fried egg. With coffee, of course. I finished off the last of an excellent Kona blend I bought at the farmers market. I heart coffee.

Then it was off to work for eight straight hours of madness. Normally my job is pretty steady and routine, but lately it has been C.R.A.Z.Y. I barely managed to scarf down my lunch (at my desk between meetings, which I hate doing):

breakfast

Leftover curried chicken zucchini boats and roasted veggies, with a side of sliced mango.  And a seltzer water because I cannot get enough of the stuff. Lunch was good, but it would have been better had I taken the time to microwave it fully. Yeah, I was that busy. I ended up eating it half cold. Sigh.

I had to run a couple errands after work and by the time I got back home all I wanted to do was sleep. Sadly, that was not in the cards for me as I am in the middle of reorganizing my apartment. Reorganizing = going through all the junk I don’t need but always refuse to toss, and tossing it. For real this time.

Dinner was a little haphazard, but I have a ton of veggies I need to use up before the weekend:

dinner

Huge salad with romaine lettuce, heirloom tomatoes, red pepper, cucumber, cauliflower, avocado, grilled chicken slices and a little bit of parmesan cheese. It was a veggie kind of day. The chicken was good, too. I pounded a chicken breast into a thin cutlet and seasoned it with cuban spices before searing it in a pan with some coconut oil. Yum.

Stop by next week for another edition of What I Ate Wednesday!
