Can I start off by asking is this not the funniest thing you’ve ever seen? Ok, probably not, probably it’s just me but I don’t care because I LOVE both movies. This makes me laugh just as hard.
And I’m done now.
And it’s Wednesday again! Hooray!
When I first thought about what to post this week, I was going to do a “wedding weekend” edition and post all the stuff we ate while eloping in Central Virginia. But then I decided – if I’m really serious about the Whole30 – and I want my readers to be serious about it as well – what would be the point of posting a whole bunch of non-Whole30 approved meals? (Plus I have to be honest – as good as some of the food tasted – we were really hurting all weekend. Is it really worth the stomachaches and bloating and all around general malaise? Really?)
So instead I decided to feature my favorite meal of the day – breakfast! I also find breakfast to be the easiest meal to maintain Whole30. True, you need to like eggs. A lot. But they are extremely versatile and you can experiment with a lot of different flavor combinations and dishes!
I’ve mentioned this before, but one of the things I love about The Husband is that he can take one look at the leftovers in our fridge and create something amazing. Me – not so much. So most mornings we have some sort of scramble. but as I said, there is so much you can do with breakfast, so here are just a few favorites we’ve been eating lately!

Looking at these pictures now, the meals don’t actually look all that appetizing – but trust me, the flavor? Is awesome. There’s so much going on that I seriously look forward to waking up and eating breakfast in the morning. We definitely try to follow the “rainbow method” – using a variety of colors on our plate to ensure we’re getting lots of vegetables! (Plus it looks so pretty…most times!) And the sweet potato hash browns? Who knew they were so easy! They’ve become a recent favorite in our house – we’ve had them for breakfast more times than I can count.
And just because I can’t resist…here are the breakfasts we ate at the Bed and Breakfast during our wedding weekend! (Yes, I know I said I wasn’t going to post pictures of non Whole food…but it was mostly compliant…sorta.)
baked eggs rancheros (eggs baked with salsa, avocado and jack cheese), sausage patties, roasted potatoes
herbed scrambled eggs with cheddar hash browns, sausage links, and fresh heirloom tomatoes (from their own garden – I so wanted to take the entire plant home with me!)
