I’ve got some catching up to do! I planned on not posting on Sunday, but Monday sort of got away from me. It was a good weekend though, so I don’t mind missing the extra day of posting – it just means you guys get to hear an extra (super awesome and not at all boring) day of my Whole30 eats! Let’s go to it, shall we?
My Day 10 Eats
Snack, 0830: We actually slept in on Saturday until 0800 – it was absolutely fantastic, I can’t even tell you! However I was starving when The Husband and I started out devotion, so I snacked on a honeycrisp apple (my favorite!) with almond butter.
Brunch, 1100: We ended up making a pretty fancy brunch – and when I saw “we” I mean Kevin. He made sweet potato hash with onions and jicama, topped it with a hamburger patty, then a fried egg, then an avocado. Yum!
Snack, 1545: So my day ended up being off, meal-wise. Despite having a decent sized brunch at 11, I was pretty hungry again in the afternoon, so I made a cup of peppermint tea and snacked on a couple of macadamia nuts.
Dinner, 1900: I ended up making one of my recent favorites – cauliflower rice! I made a veritable vat of it (yay leftovers!), chopped up some grilled chicken thighs and a hamburger patty and tossed the meat in with the rice. Pretty simple, but sometimes simple is best.
My Day 11 Eats
Breakfast, 0845: We ate another late breakfast on Sunday before heading off to church – Kevin made an omelet with machaca (spicy shredded beef) and cauliflower rice – sort of a spin off an Omu rice omelet – which is one of my favorite breakfasts ever. We topped it with – what else? – sliced avocado for our healthy fat!
Lunch, 1200: We met some friends for lunch at Eggspectations. Originally I thought about ordering breakfast, since that’s typically the easiest meal to find something Whole30 approved, but I saw an avocado chicken salad on the menu and couldn’t resist. Baby greens, cherry tomato, kalamata olive, avocado and grilled chicken topped with garlic sauteed spinach – wow. I ordered the salad without the dressing – it was a vinaigrette, so I thought it may have been OK but it’s good I didn’t risk it – it ended up being some balsamic type thing that was probably loaded in sugar. But with the salty kalamata olives and the creamy avocado and the juicy chicken, I didn’t even miss the dressing!
Dinner, 1615: We had an early dinner before our class – we tossed a roast chicken in the oven and had some delicious chicken and leftover veggies. Done, and done!
My Day 12 Eats
Breakfast, 0730: Breakfast this morning was two eggs scrambled with spinach, cherry tomato, and a diced hamburger patty. Simple but filling, which was good because I was crazy busy at work today. (Although I’d much rather be busy than bored!)
Lunch, 1230: Lunch was easy – leftover roast chicken and cauliflower rice.
Dinner, 1900: We had dinner with our neighbor’s house tonight which was a huge blessing. We mentioned that we weren’t eating grains and dairy and legumes and sugar and alcohol, so we had pot roast with carrots and potatoes. We also had broccoli salad which I think may have had some added sugar in it, but I’m not going to lose any sleep over it if that was the case. It was just nice to have some fellowship with our neighbors and enjoy the time together!
My Weekend Overall: Still going strong! No cravings for junk food or alcohol (shocker!!), and I’m not getting bored of rotating similar meals and main dishes, so that’s good! Almost halfway done!
