Whole30 Day 16 – Clear The Stage

Good morning! This is the day that the LORD has made, let us rejoice and be glad in it! Psalm 118:24

My Day Sixteen Eats

Breakfast, 0730: Took my breakfast to work as usual – I scrambled two eggs with spinach and leftover carnitas and served them over half of a roasted sweet potato. I’ve been craving sweet potatoes lately – something about the subtle sweetness and the creamy roasted goodness has been calling to me.

Lunch, 1200: After I made and packed up my breakfast I also whipped up my lunch for the day. In a pan I cooked a strip of bacon and tossed in what remained of the leftover carnitas, then I threw in a ton of chopped kale and cooked it all down. It always amazes me how much greens cook down – here I think I’m going to have a ton of healthy green veggies, only to have it reduce to a miniscule amount that leaves me scratching my head. I actually ended up throwing an extra handful of kale into the pan once they started to cook down. When I sat down to eat lunch I served the greens topped with two soft boiled eggs – I adore soft boiled eggs. To quote Amy Adams in the movie Julie and Julia, they remind me of eating cheese sauce. The creamy egg yolk mixed perfectly with the salty greens…and the best part is that it was totally unplanned! We are down to nothing in our refrigerator, so I was trying to figure out how to make “nothing” stretch into “lunch”.

Dinner, 1830: Speaking of having nothing in our refrigerator, Kevin and I sort of cheated dinner. We ended up getting a peruvian rotisserie chicken and eating it with sweet potatoes and plantains. Maybe not the absolute best choice, but neither one of us felt like cooking and we were limited on food, so it worked!

My Day 16 Overall: Instead of boring you with another couple sentences of the same, I’m going to leave you with the lyrics to a song that Kevin and I listened to this morning. One of the members of our Bible Study played it in group last week, and it’s pretty powerful. Enjoy!
