Whole30 Day 20 – Snow Day!

Yesterday was a snow day – hooray! I love snow…unless or until I have to drive in it. That’s the problem with snow for me. I enjoy it as long as we have off of work and I don’t have to go anywhere, but as soon as the active snow is over and I’m forced to scrape off my car, shovel the driveway, and foray into the winter wonderland that is our neighborhood, I’m all ready for spring. That’s how I feel as I write this this morning – although at least I have a two hour delay and we have some extra time to scrape and shovel.

Oh – and a word to the (un)wise? It’s a good idea to scrape all the snow off your car BEFORE you decide to shovel the driveway. Otherwise, you’re gonna do that driveway twice. Yes, this is what happened to me yesterday. Yes, I lack common sense. Oy.

Despite the fact that I was craving my snow day favorites of hot chocolate and microwave popcorn (movie theater butter, please!), I had a pretty good day food-wise. I still had to send The Husband off to work, but fortunately he was home before the weather got too bad. I morphed into Susie Homemaker while he was gone and cleaned the house, shoveled the driveway, straightened the garage, AND made a roaring fire just in time for him to come home!

My Day Twenty Eats

Breakfast, 0830: Ok so I actually had a pre-breakfast at around 0630: I grabbed a ground beef slider and gobbled that with some coffee before I took to the office to get some writing done. Then at 0830 I ate my “real” breakfast: a slice of meatloaf, which I grilled in a hot skillet and topped with a fried egg and some salsa and avocado, although I did that after I took the picture. For some extra green I sauteed some spinach in a little olive oil and garlic salt and served my breakfast on a bed of wilted greens.

Lunch, 1245: Although I wasn’t in the mood to cook and I wasn’t sure what exactly I was hungry for at lunchtime, I knew I needed to eat and so I came up with a pretty simple lunch – I heated up leftover pork tenderloin and served it with sliced veggies and some homemade dill mayonnaise. Perfect!

Dinner, 1830: The Husband surprised me when he came home by throwing a roast in the oven for dinner! Pot roast may be one of my absolute favorite comfort meals, particularly when it’s cold and snowy outside! We went out to shovel the driveway for a second time and by the time we came back in the house it smelled absolutely divine. A few hours later we settled down to some pot roast with baby onions and carrots and watched the snow fall outside while we ate. Sounds cheesy, but it was perfect. And the pot roast was delicious to boot!

Day Twenty Overall: We are entering the third week of the Whole30 and I feel like the timeline may actually be accurate at this point. I didn’t experience The Hangover, Kill All The Things, I Just Want A Nap, or Boundless Energy, but I definitely am  starting to feel some food boredom sinking in. Kevin and I are still trying to come up with new meals but over the past few days I’ve found I’m starting not to really care. On one hand, our weekly food prep really helps because it’s always easy to grab a chicken breast or a hamburger patty when we don’t know what else to do….but on the other hand, it’s really hard to come up with new ways to serve a chicken breast or a hamburger patty when you don’t know what else to do. Overall I’m still feeling pretty good about this, and we only have 10 more days to go…but I’m starting to look forward to Day 31 more than I have been in the past.

Does anybody have some new ideas for pre-cooked chicken breasts and hamburger patties? I’d love to hear your suggestions!

  1. I know it’s expensive, but you haven’t had much fish this time around. Maybe you can find some deals on fish and shrimp and try to change up a meal with that? Maybe find some canned crab and make crab salad or crab cakes with that and your homemade aoli? At Weis, they often sell pre-packaged shrimp at 50% off (of course you have to use it quick, because 50% off means they need to get rid of it before it goes bad) but I’ve bought it a couple times and made shrimp stir fry with it. See if Kevin can find good deals at the seafood department at Wegmans.

    1. You’re right – we’ve only had seafood once: the deep sea dory one night and crab cakes another. I haven’t been able to find high quality seafood that is affordable – the stuff at Wegmans is ridiculous!!
