I have to admit I’m having trouble coming up with thoughts to complement my food posts. Perhaps it’s because I’m also having trouble coming up with food posts? Nevertheless, here’s what I ate on Wednesday!
My Day Twenty-One Eats
Breakfast, 0830: Hooray for two hour delays at work! While Kevin shoveled out our driveway for the third time in days, I whipped up an easy egg frittata with some leftovers: I sauteed some diced onion, bell pepper and halved cherry tomatoes in a skillet, added some cooked seasoned ground beef, and added it to a baking dish with eight beaten eggs. I baked it in a 350 degree oven for about thirty minutes and voila! A delicious and filling breakfast – and something new! We ate our eggs with a side of blueberries, orange slices, and strawberries.
Lunch, 1300: Lunch was similar to Tuesday – I ate some leftover pot roast from Tuesday night’s dinner and had raw veggies with dill aioli on the side.
Dinner, 1700: Confession: I actually didn’t eat dinner last night. Well, I did have a taste, but that’s it. For whatever reason I got really nauseous all out of the blue and couldn’t stomach the thought of food…which was unfortunate, since I made oven baked pork ribs! I used a dry rub to season them and made a Whole30 approved blueberry BBQ sauce to serve with our ribs – holy delicious! I was really bummed I wasn’t feeling like eating more. Kevin made skillet cooked brussels sprouts with ground beef and onions as a side, along with some applesauce to go with.
I’m hoping to have a recipe for that BBQ sauce in the near future! I didn’t think it was going to be that great. When I tasted it by itself I thought something was missing, but once I tasted it with the spicy dry rub for the ribs? Mind. Blown.
