Whole30 Day 23 – Three Weeks Down…

…one to go! Wow. I almost can’t believe it. True, I’ve had my moments where I considered throwing in the towel and diving face first into a bowl of chips and salsa (with a Corona on the side, of course!) but I’m glad I’ve stuck it out this far. What’s another seven days?

Saturday is my grocery shopping day, so my eats from Friday were somewhat slim. Kevin and I are doing our best to use up as much food as possible before going food shopping, so we’re relying on smorgasbord meals to get us through. We haven’t done so bad…although I was seriously lacking in the photo department yesterday…sorry about that!

My Day Twenty-Three Eats

Breakfast, 0730: Kept it simple with what we’ve dubbed the “easiest breakfast ever” – hard boiled egg, tomato, and avocado. No matter what else is on our grocery list for the week, we always buy eggs, cherry tomatoes, and avocado. Always.

Lunch, 1245: Lunch was eaten in about seven minutes flat because of the 1300 meeting I forgot about, but that didn’t diminish the taste! I was so impressed by Kevin’s thrown together dinner Thursday night that I took it for lunch with me! I chopped up the last of our turkey sage meatloaf, covered it with spaghetti sauce, and chowed down! Delicious. Seriously.

Dinner, 1830: Otherwise known as clearing out the refrigerator – we ended up roasting the remainder of our vegetables and served them with sliced seasoned chicken breasts and a healthy dose of guacamole on top.

My goal for this week is to do some new dinners and spare you guys the same old pictures of chicken breast, salad, and roasted veggies. I make no promises, but I’ll do my best! Happy Saturday!
