Would you believe it if I told you an entire three day weekend went by and I did not take even one picture? Not even of my food? I’m serious!
Don’t get me wrong – I had a great weekend. We spent the holiday with family in Pennsylvania and had a great time – lounging in the pool, playing board games, eating, sitting by a campfire, and catching up. In fact it was the first time I saw any of my family since before we eloped two weeks ago. I’d have to say though that the highlight of the weekend was church on Sunday — we listened to a great sermon on prayer, and then The Husband and my mom and my sister and I had an awesome discussion afterward. We talked about prayer, about faith, about ourselves…we really did some soul-searching. It was really refreshing to be able to be so candid and have people to understand and relate to.
Bottom line: The Husband and I returned home happy, refreshed, and peaceful. It was one of the best weekends home in a long time! (Mostly because it’s been a while since I’ve been home, but for some reason this trip was different. In a good way.)
Unfortunately, all good things must come to an end, starting with returning to work on Tuesday. Good thing it’s only a four day work week!

Since the lovely Jenn may go into labor any day now (if she’s not already there), there’s a chance we may not be linking up for WIAW. But that doesn’t mean I don’t have to share my eats from Tuesday anyway!
I mean, because I know you guys are dying to see what I ate. Again. So here goes!
Breakfast: steak and eggs with sweet potato hash browns
Can I tell you how good those sweet potato hash browns are?! Who know they were so easy? (Why do I feel like I’ve already wrote about this?) The Husband and I have been eating these for breakfast like every single day. Can’t get enough.
Lunch: salad, steak strips, baby carrots, yellow peach
As usual I made a salad for lunch – yesterday’s edition featured leaf lettuce, cucumber, yellow peppers, celery, cherry tomatoes and sunflower seeds. I ate the steak separately and practically inhaled the peach – we picked up a bag of them from a local orchard by my parents house and they are to-die-for. I love ripe peaches when they are in season. Yum.
Dinner: Frank’s Red Hot chicken thighs, baked sweet potato and roasted vegetables
Do I really need to reiterate my love for Frank and his Red Hot Sauce? I think not.
