Whole30 Day 8 – So. Tired.

Wooh. Today was a rough day. From the moment I woke up I was tired and cranky. I have a feeling I know why I was feeling this way, and fortunately it doesn’t have anything to do with the Whole30. It did, however, make for a long day.

My Day Eight Eats:

Breakfast, 0745: Kevin outdid himself this morning – chili omelets! Now to be perfectly honest with you I never would have thought of making (or eating) a chili omelet. When it comes to omelets I’m much more the vegetable and cheese kind of gal. But Kevin made me a chili omelet once before and I was hooked. This morning he took it up one more level – he topped our omelets with mango salsa and avocado! Stop making that face! The chili recipe I used gave it a hint of sweet, so the sweet and spicy of the mango salsa complemented it perfectly. Really, I can’t describe how good it tasted. You can omit the mango salsa, but you should really try a chili omelet sometime soon! Oh…and we had bacon on the side. You have to be really careful with bacon on the Whole30, it’s practically impossible to find bacon that does not include sugar. We stocked up on a couple of packs from PreMade Paleo while we were preparing for our Whole30. Best idea ever.

Lunch, 1400: Admittedly, I waited way too long to eat lunch. I was also dehydrated. So hunger plus dehydration equals HEADACHE. And I have nobody to blame for it by myself, which frankly makes it worse, don’t you think? Lunch was a thrown together affair – a hamburger patty topped with chili and avocado. And it wasn’t until about 1700 when I realized that yes, I indeed ate beef topped with beef for lunch. Heh.

Dinner, 1815: Surprise! Dinner did not consist of beef or chicken tonight! Instead the Husband and I changed it up and made pork chops in our cast iron skillet. I roasted some brussels sprouts – probably my favorite vegetable ever – and we served our chops on a delicious bed of Bubbie’s sauerkraut. Pork + sauerkraut = love. And it’s good luck! I should have eaten this meal on New Years Day!

Day Eight Overall: Aside from being tired and cranky (and probably driving my husband insane in the process), it was an alright day. I haven’t had any bad cravings and I’ve been loving the food we’re eating lately. Win all around, I say!
